FINOCCHIONA

Traditional Umbrian-Tuscan product, made with lean pork and pork belly meat. A high level of artisan skill is required to produce this salami since it is made with the meat of heavy Italian pigs processed with a knife with the nerves totally removed by hand. It is then flavoured with the very distinctive taste of fennel flowers and seeds. This product is particularly suited to slicing at specialty delicatessen counters.





SALAME “NAPOLI”

A high level of artisan skill is required to produce this salami since it is made with the meat of heavy Italian pigs processed with a knife with the nerves totally removed by hand. It is naturally smoked without chemical aromas. The product has less than 25% fat content, a uniform weight and is cut into logs.





SALAME “PERUGINO”

Meat is processed with a knife only after they have been trimmed, cold dried and hung for at least 4 days and then packed in natural straight beef casings tied by hand. The nerves are removed exclusively by hand. The product has less than 25% fat content, a uniform weight and is cut into logs.





CUORE MATTO DI SUINO

It's unique in both its shape and substance since it uses a blend of very select pork meats taken from the lean part of the ham. The reduction of fat not only makes it more digestible but suited to the diet of consumers who do not want to give up the flavour of salami. To compensate for this reduction in fat, natural flavours are used to refine the taste of the meat with slow, natural aging, giving it the right level of tenderness and savouriness. The cloth casing allows for the better aging of the product and is easy to remove.





COJONI DI MULO

This traditional product of Norcia is tied by hand and stands out for its distinctive shape. It has a very fine grain and its peculiar characteristic is the presence of a strip of bacon that is inserted manually along the entire length of the product, producing a cut with an appealingly unique colour effect.





NORCICCIA

The meat is trimmed by hand, choosing only the finest parts, and then completely processed with a knife to eliminate all of the nerves and muscles. After this phase, the meat is minced and mixed with Sagrantino wine and natural flavours, garlic, pepper, salt and aromatic herbs. The sausages are then stuffed in natural casings and left to rest for a few hours before being vacuum-packed to preserve them better.





SALAMI 4 SAPORI

The traditional salami mixture is enriched with other regional ingredients like truffles, extra-virgin olive oil, Sagrantino wine and Parmigiano Reggiano cheese, making these products not only particularly tasty and enticing but also well suited to the most demanding palates. They are processed entirely with a knife and the nerves are removed completely by hand.

SALAME DI PURO SUINO CON TARTUFO

This product requires a high level of artisan skill to produce it since it is made with the meat of heavy Italy pigs that is processed with a knife with the nerves totally removed by hand. The cloth casing allows for the better aging of the product and is easy to remove before use.





SALAME DI PURO SUINO RICOPERTO AL PEPE

Salami covered with cracked pepper
This salami is completely covered in cracked pepper. It is made with a selection of particularly lean Italian pork that is mixed with natural ingredients like salt, pepper, garlic and red Italian wine after having been selected with a knife by our butchers. The fairly large grain contributes to enhancing the flavour and characteristics of this lean deli meat.





SALAME CACCIATORA & RENZINETTO

Product made from select pork with a low percentage of fat and a fine grain. Light aging at a controlled temperature makes it a rapid consumption sausage that meets the diverse needs of the final consumer. The particularly sweet flavour makes it suited to every type of palate.

CUORE MATTO DI SUINO ALLE ERBE

All the principal characteristics of a high quality product are summarized by this authentic deli-speciality. Pork meat taken from greatly valued haunches is the base ingredient. The meat is processed entirely with a knife by our skilful master pork butchers and a proper period of aging improves the taste and the quality of cold cuts with an old-fashioned flavour. Covered in onion, chives, pink pepper, juniper, rosemary, sage and thyme, this is a very special and palatable product. Form and look are unique to it.
