Exactly, Via Rafi Numero Uno is the main brand of the agri-food company Qualitalia Puglia, born from the audacity and enthusiasm of Mario De Giorgi, who sought to transform vegetables and fresh fruit of his land, Salento, into precious preserves. We produce them with artisan methods without the aid of semi-finished products or preservatives; they are perfect natural products for any diet: classic Mediterranean, vegetarian or vegan.
Yes, we have kept the processing of ancient recipes, aligning them with the highest quality standards, thus offering a genuine and safe product in line with the refinement of modern cuisine.
We use extra virgin olive oil originating from this rich earth, as a natural preservative, and we follow the seasons to grasp the products at the peak of their freshness, fullness of flavour and organoleptic qualities. Tomatoes, artichokes, aubergines, mushrooms, courgettes, lampascione (little wild onions), peppers, in vase, represent the flavours of this land of Puglia and Italy.
The fresh vegetables are carefully chosen and cleaned, they are processed within 48 hours of harvesting and then blanched in water and white wine vinegar. This then proceeds to the preparation of the various recipes ending with the oil, followed by the pasteurization. The preserves thus prepared can be consumed in many different ways: as appetizers, as side dishes or, in the case of pates, spread on toast or on roasts, mixed with pasta or spread on pizza.
