Olive variety: composed of a careful selection that the Congedi Family carries out every year on the Frantoio variety, harvested in October it gives really well-balanced flavors and aromas.
Sensory profile: extra virgin olive oil fruity on the nose, balanced to the taste, perfectly harmonious in its components of bitter and spicy. Medium fruity, it immediately releases sensations of green tomato.
Pairings: particularly recommended on white meat, legumes and shellfish.

Monocultivar Coratina
Olive Variety: composed of a careful selection that the Congedi family carries out every year on the Coratina variety, typical cultivar of the South of Italy, in Apulia, harvested only in the month of October.
Sensory profile: intense extra virgin olive oil, green in colour and very complex, it diversifies with notes of fresh hazelnut, arugula, radicchio and tomato leaf. It releases strong bitter tones.
Pairings: vegetables dressing, legumes, soups, bruschettas, grilled meat.

Monocultivar Ogliarola

Monocultivar Ogliarola
Olive variety: composed of a careful selection that the Congedi family carries out every year on the Ogliarola Salentina variety, typical cultivar of Salento, in the south of Puglia, harvested only in the month of October.
Sensory profile: fruity on the nose, but balanced to the taste, perfectly harmonious in its components of bitter and spicy. Medium fruity, it immediately releases sensations of green apple, mown grass, oregano and almond husk.
Pairings: fish dressing, seafood, shellfish, white meat, delicate dishes, vegetables with a bitter bottom.
