Sella di Mastro Dante is one of the most renowned products by Renzini. It is named after the unmistakable shape that recalls the traditional leather riding saddle.
Actually it would be more accurate to call it a 'heart of ham'. In fact, it derives from the deboned leg, clean from the inside, trimmed and squared. After a first salting, the product is marinated in a mixture based on balsamic vinegar, white wine and crushed garlic and then hung for aging in the air. Once aged, it is decorated with a pink and green pepper coating which, besides distinguishing it, gives it an intense aroma.
The peculiarity of this product is that its characteristic open shape enables the aromas and salt to penetrate deeply more evenly and faster than a boned ham. For this reason, the aging of the Sella is shorter than that of a traditional ham.
Sella di Mastro Dante is available both whole and in half-size, and ready to use. In the Christmas period, it is also offered without rind, case-shaped and coated with black summer truffle.
