Preserving in oil is the traditional method for preserving seasonal vegetables, in order to be able to taste them when it is impossible to find fresh ones.
The freshly picked vegetables from the lands of Salento, carefully selected and cleaned, are blanched and preserved in olive oil, perfumed with different spices depending on the different recipes, such as fresh mint, garlic, chilli or oregano.
The Via Rafi Numero Uno pickles are perfect as a starter ready to eat, as a side dish for main courses of meat, or accompanied with cheese.
The in oil vegetables by Via Rafi Numero Uno are available in 250 g. and 520 g. jars. There is a wide choice of fresh vegetables in oil: fillets of peppers, hot peppers rounds, tomatoes, broad beans and chicory, lampagioni (small onions), garlic and olives of different types.
