Not only specialties made with cow, sheep or buffalo milk … the ones made with goat milk are coming!
All goat products are low in calories and cholesterol. Auricchio has thought of 4 different kinds: Camembert, a soft and creamy cheese with a fresh taste; Saracino, characterized by a soft but firm texture with a mild sweet taste. Collesardo, by contrast, ageing for more than 90 days, is aromatic and firm on the palate. Last but not least, Sirbone, identified by the delicate ribbed pattern on its rind, an imprint from the whicker baskets in which it’s aged for more than 120 days. It’s really full of flavour.
